CHINCOTEAGUE CULTURED SALT

Chincoteague Bay, Virginia, USA

Grown in the salty waters surrounding Chincoteague Island and Assateague national Wildlife Refuge. These oysters are raised by Mike Mcgee, a true "Old Salt." High salinity, averaging 3.5", 100 count box.   $112 / Bushel

HOLLYWOOD / SWEET JESUS OYSTERS

Chesapeake Bay, Maryland, USA

Both brands are the same nationally sought oyster grown by Hollywood Oyster Company. Hollywood and Sweet Jesus oysters are grown in Hog Neck Creek, Hollywood, Maryland on the Patuxent River in the Chesapeake Bay. Bay oysters are, by definition, a "sweet" oyster with less salt than an ocean oyster. The "merrior" of an oyster reflects the conditions unique to each farm. Hollywood and Sweet Jesus have a subtle cucumber minerality with a distinctive flinty finish.
